today I am going to surprise you with something exotic – Bavarian soup with beer and sausage. I saw the recipe in one of the latest issues of the Bulgarian Culinary Magazine and it intrigued me a lot. I slightly adapted the recipe as I did not have this exactly Hunting Sausage, but if you have one you can use such. But I think any other will do.
I was curious what the taste of the beer soup would be. Honestly, since I’m not a big fan of alcohol and beer in particular, because of its bitter taste, I sincerely hoped that after cooking that taste would “fly away” somewhere … But it was obviously more stubborn than I expected and it was still there;)
Well, I did a terrible advertisement … But otherwise the soup was extremely rich (of course, with all these cheeses in it) and tasty and I suppose for lovers of exotic tastes, especially beer lovers, it would be amazing! Personally, I’ll make this soup again, but … with broth;)

Chop the onion and the garlic and, together with the oil, pour it into the casserole where you will prepare the soup.
Fry them until soft.
Add the sausage cut into circles or semicircles. Stir.
Fry until sausage gets red.
Pour in the beer and stir.
The beer will rise, but it shouldn't bother you, it's only in the beginning.
Season with red pepper and salt to taste. If you like it hot, you can also add some hot red pepper powder.
Let the mixture boil for 2-3 minutes and add the cream cheese.
Add the grated cheese.
Stir well until all cheeses are melted. Simmer for another 10 minutes on moderate heat.
