Hello!
For today’s holiday I offer you bread, or rather a beautiful FLOWER BREAD STUFFED WITH CHEESE. Wonderfully tender and fluffy dough! And the filling is to your taste – minced meat, vegetables such as boiled potatoes, carrots and onions or different types of cheese, as in my case.
Have a great time! 🙂
Happy National Holiday, Bulgarians! Be proud, honest and dignified and we will live forever!

НАЧИН НА ПРИГОТВЯНЕ:
In a bowl, lightly mix the lukewarm milk, sugar and dry yeast.
If you want, let it rise for 10-15 minutes.
This step is optional, as the additional initial activation of the dry yeast does not contribute to the fluffiness of the dough.
Add the salt.
Add the egg.
Add the oil, too.
Whisk.
Start adding the flour by sifting it.
Add flour until something like a ball forms.
Transfer the dough to a lightly floured working surface.
Knead a soft dough that may lightly stick to your fingers, but that shouldn't bother you. If necessary, add a little more flour.
The amount of flour that the dough absorbs is usually different depending on the flour itself and the ingredients in the dough. In my case it took exactly 440 g, but with you it can take more or less.
Lightly grease the dough with oil. Put it in a lightly greased bowl and cover it.
Leave it to rise in a warm place until it doubles in volume. This can take 40 to 60 minutes.
In a small bowl, lightly beat the egg and egg-white with a fork.
Grate the yellow cheese in it.
Crush the cheese.
Mix well.
If you think the filling is liquid, add a little more yellow cheese, white cheese or something else of your choice. As a last resort - 1 tablespoon of flour or cornstarch. I didn't have to.
Optionally add your favorite spices - fresh or dry. They are optional and to your taste - whatever you decide will be delicious!
Here is the risen dough.
Put it on the working surface.
Knead it lightly again.
If you want to make a flower like mine, divide the dough into 16 equal pieces.
To make them really equal, this time I used the kitchen scale.
But if you want to make a different arrangement of the bread, make a different number of balls to your taste.
Make a smooth ball out of each piece of dough.
Cover them with a towel and let them rest for about 10-15 minutes.
Take a ball and roll it into a thin circle about 1-2 mm thick.
The diameter of the circle should be about 15 cm.
At one end of the circle (if the circle may have an end;) ) put about 1 tbsp. of the stuffing.
To make sure that I distributed the filling evenly, I divided it roughly in the bowl into 4 parts, and for each circle I took about 1/4 of it.
Cover the filling and lightly press the edges so that it does not open.
Take the stuffing part and turn it slightly forward, only about 1/2 turn. Stop now!
Take the two opposite ends of the stuffing part and pinch them.
Lift the rest part, which remains unrolled.
Pull slightly forward and pinch again.
Thus you will get a beautiful petal.
Using a spatula, lightly press the rounded part. Don't get to the bottom!
Now pinch both ends where you just did the cutting.
One piece of advice from me: since I was trying this bread decoration for the first time, I didn't know what to expect. After baking, some of the petals opened right where I made the cut. Therefore, you can skip this step. Certainly neither the vision nor the taste will suffer.
Take a large flat pan, cover it with parchment paper and arrange the petals on top.
You can arrange it as I did in the picture or make another arrangement using your imagination.
Cover the bread with a towel and let it rest for 10 minutes.
Coat the bread with the yolk mixed with the oil and the milk.
Bake the bread in a preheated oven at 200 degrees without a fan for about 25 minutes or until you get a beautiful golden tan.
Beautiful!
Enjoy! 🙂
