I’ve been making this banitsa cheese pie for over 15 years. I saw its recipe on the internet when there weren’t so many culinary sites and famous cook-chefs. I was very impressed and decided it would be quite difficult for me to prepare it. But being really skillful ;), hop and I’ve done it – here’s your CHEESE PIE (BANITSA) IN A CAKE FORM. The taste is even better than the ordinary one, and as a bonus you have an exotic shape.

Remove the banitsa sheets from the package and, without unrolling them, cut them into slices about 1.5 cm thick.
In a large bowl add the eggs, the oil and the baking powder.
Mix well with a whisk.
Add soda water and stir again.
Gradually start adding the banitsa sheets carefully separating them well before you put them in the mixture. The goal is not get "lumps" in baking. After each portion is added, mix until completely absorbing.
This is the ready mixture you need to get.
Add the crushed white cheese and mix again.
Pour the mixture into a pre-oiled cake baking form.
Bake in a preheated oven at 180 degrees for about 40 minutes.
If the pie is stuck to the cake baking form (as it happened to me), gently separate it from the mold walls with a thin knife or spatula. Then put it onto a large plate or tray.
Cut into slices and serve. It tastes good warm or cold. Bon appetit!
