Cake with apples and quinces – a recipe from the old notebooks

During my active culinary pursuits (I’d rather say active posting on my modest culinary site), I had the incredible pleasure of meeting many new wonderful and intelligent people. Some of them are in Bulgaria, most of them abroad. In addition to the comments beneath my recipes, an active exchange of new ones began. This is one of them – CAKE WITH APPLES AND QUINCES and it is from the old notebook with recipes of Dimitrina Boeva, my most enthusiastic supporter and critic, every day sharing new recipes and ideas.

The cake is very tasty and easy and is extremely suitable for beginners. The greatest effort is in shredding the fruit. You can use only apples, apples and pears, apples and quinces or a mixture of the three fruits. As you wish! And for cinnamon lovers it is a real temptation! 🙂

 !!! 1 cup = 200 ml
For the grated fruits mixture:
 1 kg (approximately) grated fruits - apples and quinces, pears can also be added or made with only one fruit
 3-4 tbsp. sugar
 1 tsp. vanilla essence or the zest of 1/2 lemon + a little juice
For the dry mixture:
 1 cup (or 130 g) flour + 1-2 tbsp. more for sprinkling the baking dish
 1 cup (or 190 g) sugar
 ½ cup (or 90 g) semolina
 1 sachet (10 g) baking powder
For the liquid mixture:
 ½ cup vegetable oil
 ½ cup water

Peel the fruits, grate them and squeeze the juice.
I used 2 large quinces and 4-5 smaller red apples.

Sprinkle the grated fruit with sugar (3-4 tablespoons), cinnamon and vanilla essence. If you have a lemon, grate the peel and squeeze some of its juice.
Stir well.

In a bowl, mix all the ingredients for the dry mixture.
Stir.

Prepare a pan with a diameter of about 28-30 cm. Grease it with a little oil and sprinkle lightly with flour.
Spread on the bottom about 1/3 of the fruit mixture.

Sprinkle with about 1/3 of the dry mixture.

The layering is repeated 2 more times to get 3 rows of fruit and 3 rows of dry mixture.

In a glass, mix the water and oil. Stir.
Pour the mixture evenly over the cake, trying to get the entire surface wet.

Bake in a preheated oven at 180 degrees without a fan for about 60 minutes, until the cake gets a golden tan.

When serving, you can sprinkle with powdered sugar.
Optionally, you can add nuts, raisins or other dried fruits to the cake.

For cinnamon lovers, you can sprinkle with more cinnamon on top.
