My husband Theo returned from work later that evening. They had gone out of Sofia on some business and on the way back he bought from the small town of Kresna a bag of nice pink tomatoes and another one – plums, from the round and pink ones. I looked at him strangely because he does not like very much vegetables or fruits, and I assumed he had bought them for me. But apparently for these plums he already had a vision in his head what should happen to them. And he almost painted it for me in words – “a fruit cake, but with larger pieces, you know what I mean…” And, of course, while I’m wondering exactly how to turn them into something like that, fate knows its job and accidentally before my eyes popped up this recipe for Eggless Fruit Cake from the culinary site www.homecookingadventure.com.
It turned out just wonderful! And the best part is that you can experiment with all kinds of fruits.

НЕОБХОДИМИ ПРОДУКТИ:
НАЧИН НА ПРИГОТВЯНЕ:
Prepare a baking tray with a falling bottom with a diameter of about 24-26 cm.
Line the bottom with baking paper and, if desired, the walls.
Wash the plums and cut them into pieces about 2-3 cm in size.
Sprinkle with flour.
Stir to stick well.
Sift the flour into a bowl. Add the baking soda.
Add the baking powder.
Stir well.
In another bowl, add the sugar and oil.
Add the yoghurt and vinegar.
Add the vanilla extract.
Whisk well.
Start adding the dry mixture to the liquid mixture. Pour about 1/3 of the dry mixture and whisk well. Once the flour is well absorbed by the liquid mixture, then add the remaining dry mixture in portions.
Stir until smooth.
It's the fruits' turn. Add them, too. Stir well.
Pour the mixture into the baking dish.
Optionally, you can further decorate with thin slices of fruit on the surface.
In a bowl, pour the flour and sugar.
Mix.
Add the oil.
Stir. Large crumbs should be obtained.
Sprinkle the crumbs over the cake.
Bake the cake in a preheated oven at 180 degrees with a fan for about 50 minutes. Check the readiness of the cake with a wooden skewer or a toothpick.
Remove the cake from the oven and allow it to cool completely.
With a thin sharp knife, cut carefully between the cake and the walls of the baking dish. You can now safely remove the cake by removing the walls.
Optionally, sprinkle with icing sugar on top.
