Of all the delicacies, I love beans and roasted red peppers the most. And both together – you get a dish just to lick your fingers.
This is a salad recipe (maybe an appetizer) and I present it to you the way mom prepares it. The idea is not just to mix roasted peppers with boiled beans. There are some tricks that make it far tastier – first chop and then “fry” with hot oil.
Try it and you will see what I am talking about…

First prepare a porcelain or metal (not plastic!) bowl. This is important because afterwards there is an interesting procedure for "frying" the salad. You will see it below!
In a bowl, pour all the salad products, without the oil - boiled beans, finely chopped peppers, parsley (I used frozen from the freezer) and crushed garlic.
Mix all the products and chop them well.
I used my grandmother's old wooden chopper, which has gone through many decades and recipes.
The next procedure is very interesting and slightly risky. But it is that makes the salad so delicious.
Pour the oil into a metal jug/can/bowl and heat it on the stove to the maximum, being careful not to start burning and smoking.
Pour the hot oil into the salad in a thin stream. From the high temperature of the oil, the salad literally starts to fry. Immediately start stirring the salad so that the hot oil can "fry" most of it. You have to be fast, because this moment only lasts a few seconds.
Mix the salad well.
Taste it and season with salt if necessary.
Serve as a side dish or appetizer. Store in a tightly closed bowl in the refrigerator for up to several days.
