A favorite dessert for generations of Bulgarians! A favorite dessert at home, too!
It may seem easy to prepare it, but there are some small details that are good to follow to get a fine structure. Here’s how I do it.

НАЧИН НА ПРИГОТВЯНЕ:
To make the Creme Caramel I used metal bowls.
For the caramel layer, I poured 1 - 1 and a half tsp. sugar in each bowl.
I placed the cups on the heat on medium heat, turning them and moving them with a thick towel until the sugar melts.
If you are worried about melting the caramel this way, you can do so by pouring the sugar into a casserole and melt it on the heat until the sugar gets caramelized. Then pour the caramel into each cup.
Place the cups in the pan in which you will bake the Creme Caramel.
Break the eggs in a bowl.
Add the sugar.
Beat the mixture well with a whisk so that the sugar can melt.
Add the milk in a thin stream, stirring constantly.
Add the vanilla and stir.
If you have someone to help you like I did, your Creme will be a lot tastier. 🙂
Take a jug with a furrow and strain the mixture into it. If it is smaller, strain the mixture in several portions. This will help you on the one hand to strain the remains of the eggs (such as pieces of egg whites), as well as to remove the bubbles in the mixture to make it smooth. And with the jug it will be easier for you to pour the mixture into the baking bowls.
Pour the mixture into the bowls.
Exactly 10 bowls of Creme Caramel are obtained from this quantity, if you use the standard metal molds for Creme Caramel.
Pour cold water in the big baking pan, reaching about half the level of the cups.
Place in the oven and bake for about 1 hour at 160 degrees without a fan. It is good that you keep the water from boiling. During baking process you can add about 1 cup of cold water in the baking pan.
After the Creme Caramel cools down, run a thin knife along the inside wall of the mold. Place a serving plate on top and turn both at the same time with a quick move. Then carefully lift the baking mold. The delicious caramel sauce will flow into the plate. It is the most delicious thing.
Here is the incredibly delicious and tender Creme Caramel.
However, this dessert has a huge disadvantage - it disappears too quickly. And that amount is never enough!
