Cut the eggplant into slices about 1.5 cm thick and arrange them in a baking tray covered with baking paper. Season with salt and olive oil.
Bake at 200 degrees to a higher level in the oven until golden.
Chop the onion and pour it into a frying pan with 1-2 tablespoons of vegetable or olive oil.
Once the onions have softened, add the minced meat. Stir to make the mince crumbly.
Add all the spices.
Mix everything well. When the minced meat changes color and becomes crumbly, it is ready.
Remove the mixture from the hotplate. Add the tomato paste and mix everything well.
On each eggplant slice, place 1-2 tbsp. of the mixture.
Put a piece of yellow cheese of your choice on each slice.
You can also sprinkle with grated parmesan cheese.
