Eggplant pizzette with grounded meat

A surprisingly tasty and easy recipe.

And most importantly – LOW CARBON !!!

Even the eggplant non-lovers confirmed that the combination is very good 🙂

INGREDIENTS:

 2 medium sized eggplants
 500 g grounded meat (mixed beef and pork)
 1 medium sized onion
 5 tbsp. tomato puree
 1 tsp. salt
 1 tsp. black pepper
 1 tsp. garlic powder
 1 tsp. onion powder
 1 tsp. samardala (honey garlic) - typical Bulgarian herb
 1 tsp. savory
 1 tsp. oregano
 50 g cheese of any choice
 parmesan cheese for sprinkle (optional)
 vegetable or olive oil

DIRECTIONS:

Cut the eggplant into slices about 1.5 cm thick and arrange them in a baking tray covered with baking paper. Season with salt and olive oil.

Bake at 200 degrees to a higher level in the oven until golden.

Chop the onion and pour it into a frying pan with 1-2 tablespoons of vegetable or olive oil.

Once the onions have softened, add the minced meat. Stir to make the mince crumbly.

Add all the spices.

Mix everything well. When the minced meat changes color and becomes crumbly, it is ready.

Remove the mixture from the hotplate. Add the tomato paste and mix everything well.

On each eggplant slice, place 1-2 tbsp. of the mixture.

Put a piece of yellow cheese of your choice on each slice.

You can also sprinkle with grated parmesan cheese.

Bake at 200 degrees for about 10 minutes until the cheese is golden.
