Today I am going to present to you a very old recipe from mummy cooking notebook – Fake Caviar with Semolina.
I don’t know if I associate it with childhood or just this recipe is delicious, but the combination of these simple products gives me great pleasure.
It is worth preparing this gut. Really! Enjoy! 🙂

In a small saucepan, put the semolina, the water and the salt. Stir well and bring to simmer over a moderate heat. Remove from the hotplate and let it cool for 10-15 minutes. It is good to mix it periodically so that it does not form a crust on top. If you want, you can wrap it with nylon.
Take the grater and grate the onion. You can cut it into small pieces if you like, but in my opinion this way the onion just gives it a nice aroma without the crunchy pieces inside. Pour onions to the cooked and cooled semolina. Optionally, you can smash 2 cloves of garlic and add them to the mixture.
Note: After posting the recipe, a nice lady told me a piece of subtlety. It happened to her, after grating, that the onion has a slightly bitter taste. Therefore, if you want to avoid it, just in case put the grated onion in a small strainer, mix it with some salt and wash it under running cold water.
Pour in the mayonnaise and mix everything very well.
Taste the stirred "caviar" by adding some freshly squeezed lemon juice. Try to taste and optionally season with more salt and lemon juice.
Serve the fake caviar in a beautiful bowl or plate, decorating with olives on top. It's great as a side dish, an appetizer for a any drink, or just spread it on a slice of bread.
