Spring is my favorite season with green salad becoming my main daily meal. Fried yellow cheese is the perfect “garnish” for green salad – nutritious, satisfying, crunchy and spicy. When I first made it many years ago, I did not understand why cheese needs to be separately coated in flour and egg. I mixed everything together and it turned out easy and tasty. This is my recipe.

Mix the eggs, flour, salt and black pepper. Cut the cheese in equal sized pieces.
Heat the oil to high temperature.
Coat the cheese piece in the batter and fry until golden brown, about 30 seconds.
Remove from heat and drain on paper towel.
Serve warm.
