First, turn on the oven at 200 degrees without a fan.
Prepare a large baking pan and cover it with aluminum foil or baking paper. This will save you serious rubbing and washing of burnt particles.
In a bowl, put all the dry spices and mix well.
Sprinkle the dry spices over the meat.
Rub the spices evenly into the ribs on all sides.
Cover the ribs with aluminum foil and place it in the preheated oven.
Bake for 2 and a half hours.
Turn them around every hour.
In a bowl, put the ketchup, mustard, Worcestershire sauce, chili sauce (if you decide to use), brown sugar, salt and pepper. Stir.
In a pan, heat the olive oil over medium heat and add the finely grated onion and crushed garlic. Fry until lightly golden.
Add the sauce and cook over medium-low heat, stirring often.
Cook until the sauce thickens slightly.
Take the ribs out of the oven and cut them. If you want, you can leave them as they are.
Spread the pieces with the sauce on all sides.
Return the ribs to the oven and bake for another 15 minutes.
If you think that they have not become golden underneath, you can turn them over and bake for another 5 minutes.
Serve while still warm with your favorite garnish!
