I’ve wanted to prepare these muffins for such a long time, but for no reason I kind of forget it. One day my dear friend (and my sister’s friend and colleague) Zoya Koleva had prepared them, made photos and tagged me on Facebook. This pleased me a lot because it meant that she defines me as a culinary expert, who would be interested in something like that. Zoya, it’s an honor for me!
Here is how I prepared them with her instructions and recommendations. They turned out really good and the child had breakfast at school for 2 days. The chia, the oatmeal and the walnuts give them an interesting taste and consistency. Well, some may find them “quite French”, as my husband Theo put it, which I think is a great compliment for them.
Well, I present to you the recipe for Zoya’s HEALTHY MUFFINS.

INGREDIENTS:

In a small bowl mix the chia with the water and let it swell for about 5 minutes.
In a larger bowl put the yogurt with the baking soda and let it rise for 1 minute.
Add the eggs.
Add the chia.
Add the crushed cheese.
Add the crushed in bigger pieces walnuts. Thus you can feel better when eating.
Add the oat flakes.
Add the flower.
Finally, add the sunflower oil. You can replace it with olive oil, coconut oil or any other flavored oil you like.
Mix all the products well.
Sprinkle with your favorite spices - savory, oregano or other. Stir again.
Carefully pour the mixture into paper muffin pans, not filling them up to the edge. I prepared them in small muffin molds with 5 cm in top diameter. 21 pieces came out.
Bake in a moderate oven at 180 degrees for about 15-20 minutes until golden.
Here are my beauties. Great breakfast for the kid's school box. There were some left for the next day and were even more delicious! Have a nice and delicious day! 🙂
