Do you like honey cookies? I do. But, honestly, I haven’t eaten in at least 20 years, because the ones that are now sold in the store, like almost everything else, do not have the taste we remember. OK, I know I sound like an aging woman grumbling with nostalgia for the past. But I only grumble about some things, like pastries in the candy shops, vanilla ice cream, grandma’s cheese pies and… honey cookies.
One night I wanted to make a quick and easy cake with not so many ingredients and despite half the library full of cookbooks and notebooks with handwritten recipes, I just did a Google search. Then I saw this recipe on the internet site www.zajenata.bg. Sugar, flour, cocoa, honey (which if you don’t have, you can replace with any jam), not even milk, but hot water… Great, I said to myself, except for the butter in the glaze, it’s really suitable for fasting! I rolled up my sleeves and here it is! The whole house smelled delicious and homemade cake like during Christmas holidays! And no one had warned me about the taste (especially after it cooled down, even the next day) – just like the honey cookies of the childhood times!
A divine delicacy that melts in your mouth and you want more and more! Try it and you will see! 😉
НЕОБХОДИМИ ПРОДУКТИ:
НАЧИН НА ПРИГОТВЯНЕ:
Put the sugar in a bowl.
Add the sifted flour.
Sift the baking powder as well.
Add the cinnamon.
Sift the cocoa as well.
Whisk well all ingredients.
In the same bowl, add the oil.
Add the honey.
Add the warm water.
Finally, add the vanilla sugar.
Mix everything well until a homogeneous mixture.
Grease a baking pan with butter or margarine (pan measuring about 25/30 cm).
Pour the cake batter.
Place the pan in a cold oven and turn it to 230 degrees C without a fan.
Bake for 25-30 minutes. Check readiness with a wooden skewer or a toothpick.
Allow the cake to cool for at least 30 minutes.
Put all the ingredients for the glaze in a small bowl.
Put briefly (with breaks and check for short periods of about 5-10 seconds) in the microwave and then stir well. It is necessary to melt the butter.
If you're worried about melting everything in the microwave (honestly, there's a risk, once I forgot the bowl inside and the chocolate curdled), you can do it in a fireproof bowl on a water bath. Place it on a saucepan with slightly boiling water that does not touch the bowl with the chocolate. Stir until all ingredients are melted.
You should get a smooth and homogeneous mixture.
Pour the icing over the cake.
Then allow the cake to cool at room temperature.
It is recommended that after the cake has cooled at room temperature, to put it in the refrigerator.
Served cold, it tastes like our favorite honey cookies from our childhood. Perfect and unforgettable taste!
Serve with a cup of warm coffee!
