This recipe is a replica of a cake I made some time ago. I used the recipe for Jaffa cake by Mira Rumenova, but at the request of my daughter I baked them in muffin molds and they became very interesting and beautiful.
Here’s what came out – amazing little leopards! 🙂

If you don't have buttermilk, you can do it the way I did. In a glass pour 1/2 cup of milk by adding 2 tbsp of lemon juice. Stir well and let sit for about 10 minutes. The milk is lightly curled and gets the consistency of a liquid yoghurt.
In a deep bowl, mix the flour, baking powder and sugar.
In another bowl, mix the oil, orange peel, orange juice and eggs. Add the buttermilk. Mix all ingredients well.
Add the flour and sugar mixture.
Mix well until smooth.
Separate in another bowl about 1/3 of the mixture. Add the sifted cocoa powder to it. Mix until smooth.
Prepare the muffins baking pan. Insert the paper cups into the slots.
Fill the cups to about 2/3 of the volume with the white mixture.
Add 1-2 tablespoons of the cocoa mixture in each nest.
Bake the muffins in a preheated oven at 180 degrees for about 20 minutes.
They look really delicious!
Beautiful leopard patterns are obtained.
Our muffins were a gift, so we did our best with the packaging. 🙂
