Nothing complicated, but so delicious …
And low carb! We skip potatoes and we put zucchini instead. Here’s how we did it:

In a large and deep saucepan heat the oil and fry the onions. Once it becomes glassy, add the garlic, cut into small pieces.
Add grated carrot.
Continue stirring until soft.
In a separate bowl, place the minced meat and add about half a glass of warm water to it. Stir well.
Add the mince to the vegetables in the pan.
Stir until the mince becomes "crumbly" and changes its color.
Add the spices and stir.
Add grated fresh or canned tomatoes.
Add the tomato paste.
Mix well to a homogeneous mixture.
Cut the zucchini into rings and arrange the bottom of the pan where the moussaka will be baked.
Sprinkle with the finely chopped dill.
Spread half of the mince mixture on the zucchini.
Arrange a second row of zucchini on the mince.
Put the other half of the mince.
Bake in the oven for about 20 minutes, until light brown on top.
Put the eggs in a bowl.
Add the sour cream or the yogurt.
Stir with a wire whisk until a homogeneous mixture.
Pour over the baked moussaka and return to the oven.
Bake until golden brown.
Grate the cheese and return to the oven.
Bake again until brown.
