Today I would like to diversify a little the Easter menu with a very old and delicious recipe that I remember from my childhood – Ropotamo Mackerel.
For our younger audience, I would like to explain that the recipe comes from canned mackerel, which was sold in shops, which contained tomato sauce and pickled cucumbers. I’m not sure about the beans … I may be burdened by the taste of childhood, but I have a feeling that everything was tastier then. Probably because I was a kid … So I’m glad Tanya Kiryazova reminded me of this recipe and shared it on her site mytasted.blogspot.com. Thank you very much, Tanya!
And here is how I prepared it:

НАЧИН НА ПРИГОТВЯНЕ:
Cut the onions and carrots into small pieces. Put them in a deep frying pan with the oil and fry them for about 5 minutes.
Once the onions and carrots soften, add the chopped garlic.
Simmer for another 5 minutes until the vegetables get tender.
Add the tomatoes. If you have a home-made or purchased minced spices for cooking in a jar, add one. Stir.
Add all the other spices. Stir.
Add the water. Allow to simmer for about 5-10 minutes.
Meanwhile, cut the mackerel into thick slices and arrange them in the baking pan. Optionally, you can cut small pieces of lemon and one inside each piece of mackerel. I did not put it, because I do not like sour, and I decided that pickled cucumbers will give enough sour flavour to the dish.
Now add the drained cans with the beans.
Add the pickles cut into slices. Stir well.
Pour the sauce over the mackerel in the backing pan.
Bake the dish in a preheated oven at about 180 degrees for about 45-50 minutes until the fish is cooked.
Serve while still warm.
