Mince meat baskets in muffin molds

Today I present to you a very tasty and interesting recipe – Mini baskets, but not made from sweet dough, but from minced meat. And in what? In muffin molds, of course :).

Filling is a matter of imagination and what’s in the fridge!

Besides being very tasty, this recipe is keto (low carb), too!

INGREDIENTS:

For the stuffing:
 1 medium sized onion
 1 red pepper
 1 green pepper
 ½ carrot
 2 eggs
 3 branches parsley
 3 branches dill
 100 g shredded yellow cheese
 3 tbsp. sunflower or olive oil
For the mince meat baskets:
 500 g mince meat (pork or mixed)
 1 egg
 salt to taste
 2 branches parsley
 1 tsp. garlic powder
 1 tsp. onion powder
 1 tsp. savory
 other spices you wish
 sunflower or olive oil for spreading the nests in the muffin mold

Cut the onions, carrot and peppers into small cubes. In a pan heat the fat and place the diced ​​vegetables. Optionally, you can add 3-4 tablespoons of water to stew them rather than fry directly.

Stew the vegetables until they are almost ready. Remove from the heat and allow mixture to cool.

Grease the muffin molds lightly. Form the nests of the mince, making sure that the mince layer is almost equal everywhere (about 0.5-1 cm) and make sure that so that the tops do not peak out from the molds.
