I bought some fresh nettle from the market. I liked it, but I had not decided how I would cook it. I thought about something like an omelette… But the moment I started cooking, things happened on their own, and that green thing came about. Many people do not like the dark green color of dishes, but I can tell you that the taste was excellent, especially in combination with sour cream, cheese and walnuts. I liked the different textures – the blended soup, the cauliflower and hard nuts. This dish is very fast and easy. And the nettle can be replaced with other green vegetables or spices. Clean well the nettle and put it in a pot with 2 cups of water. Let it boil for about 10 minutes to become softer.
Chop the onion into big pieces and add it to the pot. Let it simmer for a while until get soft.
Add the spices and stir.
Blend until you get a homogeneous mixture.
Add the cauliflower, already cut into small roses.
Let it simmer for 3-4 minutes to soften slightly, but not to cook completely.
If you like, you can also blend the cauliflower and you'll get a thicker soup, which certainly will be very tasty.
Serve the soup warm and sprinkle on top with 1-2 tbsp. of sour cream, chopped walnuts and a few pieces of white cheese.
