Today I am giving you an idea for a fish recipe for the occasion of the coming Saint Nicholas Day. It is not the traditional stuffed carp, but it is traditionally Bulgarian and incredibly delicious. And fast;)

Clean thoroughly and wash the mackerel. Cut it into slices about 3-4 cm thick and arrange them in a baling pan greased with oil.
Prepare the spices - black pepper and allspice grains and the bay leaves. Cut the garlic into slices.
Put the tomatoes in a bowl and if they are not ground or in cubes, smash them lightly. Add the black pepper, the allspice, the bay leaf, and the garlic. Add 1/2 tsp. sugar. It will soften the acidity of the tomatoes.
Add the oil.
Add about 1/2 cup of water and mix well. Taste the mixture and if the tomatoes are not salty, add salt to taste.
Pour the tomato mixture over the fish, trying to cover everything evenly. The liquid should cover the whole fish well.
Cut the onion into thin slices and spread it over the fish. If you love lemon, you can also arrange lemon slices on top.
Bake the fish in a moderate oven at about 180 degrees for about 1 hour to let the sauce thicken. Everything is ready when the onion is completely tender.
