Let’s go back to our national Bulgarian cuisine. Oven baked meatballs with tomato sauce and cheese.
First, I was intrigued by the title (in Bulgarian) – an interesting combination of mince meat and dairy products. Extremely delicious!
I saw this recipe from Ivan Zvezdev’s archive of Bulgarian recipes. I am glad that there are people who care about traditional Bulgarian dishes and that they are preserved, because they are part of our history and culture. Let’s join their efforts to preserve our identity!

In a deep plate soak the bread.
In a bowl mix the products for the meatballs - the mince, the eggs and the finely chopped onion. Add the softened bread, broken into crumbs. Add the milk in which the bread had soaked. Add also the other spices. Mix well the mince products with your hands to blend all the ingredients together.
Shape the meatballs and place them in an oiled baking pan. Let them rest while you make the sauce.
In a frying pan place the finely chopped onion and the pepper. The pepper may be roasted, but it also be raw.
Once the vegetables get tender, add the red wine.
Let the sauce simmer for about 5 minutes to thicken.
Once the wine almost evaporates, add the diced canned tomatoes. Season with salt and sugar. Cook for another 10 minutes until the sauce is reduced.
Pour the sauce over the meatballs in the baking pan.
Bake at 200 degrees for about 15 minutes until the meatballs are ready and the sauce is reduced.
Sprinkle with grated yellow cheese and crushed white cheese.
Bake for another 5 more minutes until golden.
Serve the meatballs while still warm with a glass of good red wine. Bon appetit!
