After yesterday’s trip to France with the wonderful home-made croissants, let’s return to our homeland and prepare something that originates from here, with sauerkraut – SOURKRAUT WITH RICE AND POTATOES. And despite the spring temperatures outside, let’s not forget that it’s still February.
Here is how I prepared this delicious Bulgarian variation – the way my grandmother prepared it:

НАЧИН НА ПРИГОТВЯНЕ:
In a pan (or in the lazy way, as I did - in the baking pan where I baked the dish), fry the finely chopped onion in the fat.
After the onion is fried, add the cleaned and washed rice.
Fry a little more until the rice becomes transparent.
Add the peeled and diced potatoes (about 1-2 cm). Stir and fry for 1-2 minutes.
Add the finely chopped sauerkraut.
Add the spices and about 1 cup of water (or sauerkraut juice diluted with water). Be careful with this juice, because it is quite salty.
Stir on the stove over medium heat until the liquid is absorbed.
Transfer the mixture to the baking pan in which you will bake the dish.
Add another 3 cups of water and stir.
Bake the dish in a preheated 180 degree oven for about 30 minutes until the liquid is absorbed and the rice and potatoes are cooked.
