Here’s a very interesting dessert with ingredients that everyone has in the fridge. Kind of like pancakes, but not quite. Fast and delicious, without the annoying hanging and flipping in front of the pan.

Put the eggs and the milk in a bowl.
Add the oil.
Beat well with a whisk.
Add the salt and sugar.
Start adding the flour by sifting it.
Stir well until a homogeneous pancake mixture is obtained.
Pour the mixture into a large baking tray (the oven tray), covered with baking paper or a Teflon pad. Spread the mixture evenly.
Bake in a preheated oven at 200 degrees.
After taking the pancake out of the oven, grease it with the butter while it is still warm.
Distribute evenly the stuffing you have prepared for the pancake roll. You can put salted stuffing - cucumbers, tomatoes, cheese, smoked cheese or cream cheese, salami. You can spread with chocolate paste, fresh fruits, marmalade, jam or whatever you like. I had dried fruits (raisins, dates, plums) and mixed them with some crushed walnuts. I spread them evenly over the pancake. It is very important not to over-fill, as the roll will become very thick and will not bend well.
Wrap the roll from the wide side. If you want a thicker roll, you can roll it from its short side.
Transfer the roll to a large plate or tray. If it seems too long, you can cut it in two and then place it on the plate.
Cut slices and serve. It's great both warm and cold! Enjoy! 🙂
