This seemingly very simple recipe is so delicious that it’s hard to describe. It was born on a day when my family were guests at Jeff’s. Jeff’s wife (i.e. my friend Maya) doesn’t eat meat, so we always cook something vegetarian. We opened the refrigerator door and unanimously decided to deprive Jeff of the peppers he makes an omelette with. We mixed the ingredients for the filling and this tasty and beautiful thing turned out!

Clean the peppers and cut them in halves.
Spread olive oil on the baking sheet and place the peppers.
Mix the eggs, grated yellow cheese, white cheese and spices in a bowl.
Fill the peppers with the cheesy filling. Sprinkle olive oil on top.
Bake at 190 °C for 25-30 min.
