The day we were visiting Maya and Jeff and preparing the veal rolls with stuffing, we prepared something vegetarian and super easy. Maya does not eat meat and we always care to have something for her (vegetarian meals are super delicious but I still find it incomprehensible how there can be people who definitely do not like meat).
We opened the fridge and unanimously decided to deprive Jeff of the peppers he uses for the omelettes he often likes to make. Here’s what we created – pepper boats. I can say that my 9-year-old daughter Maria and Jeff ate more of the peppers than the beef rolls which is definitely indicative of the taste. It’s super easy and fast. You have no excuse not to make them 🙂

Clean the peppers and cut them in halves.
Spread olive oil on the baking sheet and place the peppers.
Mix the eggs, grated yellow cheese, white cheese and spices in a bowl.
Fill the peppers with the cheesy filling. Sprinkle olive oil on top.
Bake at 190 °C for 25-30 min.
