After the abundant amount of lamb meat on St. George’s Day, it’s time to eat something fasting. Here is an old recipe for a sorrel porridge, which you can prepare with all kinds of greens herbs.

НАЧИН НА ПРИГОТВЯНЕ:
First, prepare the milk mixture. The dish is cooked very quickly and will be helpful if it is ready. Put the eggs and the milk in a bowl and beat them with a whisk until a homogeneous mixture.
Also prepare the sorrel, cutting it into large pieces.
In a wide and deep pan, heat the oil. If you decide to use bacon, cut it into small pieces and leave it until melted. Add the onion. Fry for a few minutes until soft.
When the onions are almost done, add the garlic cloves, finely chopped. Stir well.
Reduce the heat and add the sorrel leaves.
Stir for 1-2 minutes.
Add the flour.
Stir for 2-3 minutes until the flour is lightly baked.
Start adding in a thin stream the milk mixture. Add about 1/3 of the mixture first. Stir well. This is to prevent mixture from getting lumps.
Continue adding portions of the milk, stirring each time after you add the milk until a homogeneous mixture is obtained.
This is the mixture you should get after adding all the milk.
Allow the mixture to cook over low heat for 3-4 minutes.
Add the crushed cheese and stir. Your sorrel porridge is ready!
Serve with a little more crushed cheese and optionally finely chopped fresh spices.
