Strawberries are my favorite fruits and desserts based on mascarpone cheese and cream are fast, easy and very delicious. That’s why the cheesecake with spring fruits – especially strawberries! – takes place of our favorite tiramisù in the winter season. Good buy winter, hello spring!

Process the cookies in a food processor, add the melted butter and press onto bottom of a baking sheet.
Choose similar sized strawberries, cut them in halves and arrange them around the edges of the sheet.
Whisk together the gelatin and 100 ml of cold water cold and leave for 10 min.
Mix together the mascarpone cheese, sour cream and heavy cream, add the sugar and vanilla.
Melt the gelatin and add it to cheese mixture.
Pour the cheese mixture into the sheet. Refrigerate for few hours.
