Stuffed mushrooms with curds, leeks and peppers

Fast, easy, delicious! And low carb 😉

However … I got a lot of the mushroom stuffing left and the next day I made … oven baked sandwiches!

INGREDIENTS:

 10 medium sized mushrooms
 150 g curds (or cottage cheese)
 ½ red pepper
 ½ green pepper
 60 g cream cheese
 ½ stalk leeks
 ½ tsp. salt
 5 tsp. olive or sunflower oil

DIRECTIONS:

Wash the mushrooms well and arrange them in a greased baking pan with the hole up. I do not throw away the buns, because when the mushrooms are baked, they are also very tasty.

With some part of the oil fry the leeks and peppers until tender.

In a bowl mix the curds and the cream cheese.

Add the softened and slightly cooled vegetables.

Stir well.

Fill the mushrooms' hole with the mixture. If you want, sprinkle with 2-3 tablespoons of the oil. Bake in a preheated oven at about 190 degrees for about 20 minutes until golden.
