Quick and very nice salad with a slight exotic flavour that comes from the roasted peanuts. You can serve it as a garnish for just about anything – for Chicken breasts steak with sausage, Baked fish in creamy lemon sauce or Jeff’s Baked baby back ribs.

Put the salad mix in the bowl, if necessary wash it first and cut into large pieces.
Peel the cucumber and cut it into larger pieces.
Clean the peppers from the seeds and cut them first into strips, then into squares about 2-3 cm in size.
Add the olives and peanuts. Mix everything well.
Season with salt and olive oil. Optionally, you can also add apple or balsamic vinegar.
